Having limited store hours saves on their operating costs allowing them to keep their prices low. Most stores, even in densely populated areas, see a significant drop off in sales between 7:30-8:30.

The reason Whole Foods, Mariano's, Gelson's and other high end stores close earlier is because their stores are too labor intensive and it would be cost prohibitive to stay open very late.
