THe Columbia EatWell was a long-running Schnucks's for many years and the only super near downtown and the U of M campus. The store probably opened in the 70s and is probably on the small side for them, hence this format. They may have figured that having the flagship state university there, along with Columbia being a regional suburb for people working in Jefferson City (state capital) and Fulton (small college, large state institutions) would make it a good candidate. The population might not have been big enough and Columbia has long been a very competitive market, even if they don't have direct competitors nearby. Columbia is in the middle of the state but more tied to St. Louis which should work in Schnuck's favor.

Columbia Eatwell may have been Schnucks a long time ago (for some reason I thought it was a former Osco) but in its most recent form before Eatwell it was Luckys Market. That was the first Luckys Market I visited. It did well with that format. Schnucks Eatwell retained most interior elements of Luckys Market but did sterilize the store to an extent. Luckys Market tried to have some life. Schnucks has a couple other stores around Columbia. I think their format is a good fit in that market.
